Bone Marrow Butter (Compound Butter for Steaks, Potatoes & Veggies)

This recipe turns marrow into a melt-on-everything magic topping. Dollop it over resting steaks, mashed potatoes, sautéed greens, or roasted vegetables.

Ingredients

  • 3–4 roasted marrow bones

  • ½ cup softened unsalted butter

  • 1 tbsp chopped parsley

  • 1 tsp minced garlic

  • ½ tsp lemon juice

  • Pinch of smoked paprika (optional)

  • Salt & pepper to taste


Instructions

  1. Roast marrow bones at 450°F for 15 minutes until soft.

  2. Scoop marrow into a bowl and mash with the softened butter.

  3. Add parsley, garlic, lemon juice, paprika, salt, and pepper.

  4. Mix well, spoon onto parchment paper, and roll into a log.

  5. Refrigerate 1 hour before slicing.


Serving Ideas

  • Slice a pat onto hot steaks for instant richness.

  • Mix into mashed potatoes to replace cream.

  • Spread on crusty bread like savory caramel.
