Bone Marrow Butter (Compound Butter for Steaks, Potatoes & Veggies)

This recipe turns marrow into a melt-on-everything magic topping. Dollop it over resting steaks, mashed potatoes, sautéed greens, or roasted vegetables.

Ingredients
3–4 roasted marrow bones
½ cup softened unsalted butter
1 tbsp chopped parsley
1 tsp minced garlic
½ tsp lemon juice
Pinch of smoked paprika (optional)
Salt & pepper to taste
Instructions
Roast marrow bones at 450°F for 15 minutes until soft.
Scoop marrow into a bowl and mash with the softened butter.
Add parsley, garlic, lemon juice, paprika, salt, and pepper.
Mix well, spoon onto parchment paper, and roll into a log.
Refrigerate 1 hour before slicing.
Serving Ideas
Slice a pat onto hot steaks for instant richness.
Mix into mashed potatoes to replace cream.
Spread on crusty bread like savory caramel.
