Reservations Now Open

The price shown on each reservation listing is your deposit only, not your final total. A flat deposit secures your reservation and harvest slot across all share sizes. Your final balance is based on your selected share size, hanging weight, processing costs, and any optional add-ons. Deposits apply toward your final balance and become non-refundable once your animal has entered processing. Final payment is due before pickup, delivery, or shipment.

Current reservations are being scheduled for April beef and June pork.
Earlier reservations give you the best chance at your preferred timing.

Processing & Final Pricing

Your reservation deposit is applied toward your final balance and is not your full total. Final pricing includes the remaining animal cost, standard processing, any selected smokehouse or specialty items, add-ons, and delivery or shipping if needed.

Standard processing is billed separately.

Beef Processing

Kill and clean: $143 per head

Cut and wrap: $1.26 per pound hanging weight (Minimum cut and wrap charge: $675 per head)

Box deposit: $15–$25 per half or whole beef

Pork Processing

Kill and clean: $93 per head

Cut and wrap: $1.26 per pound hanging weight

Box deposit: $15 per head

Optional Add-Ons
Smokehouse and specialty items are additional and billed separately. Custom selections such as snack sticks, jerky, summer sausage, seasoned sausage, patties, smoked and cured items, primal blend grind, marrow bone splitting, and dog food grind are available based on your cut sheet choices.

Aging & Storage
Up to 21 days of dry aging is included with standard processing. Additional aging and long-term freezer storage are available if needed.

  1. What does my reservation deposit cover?

  4. Are smokehouse items and add-ons included?
    No. Smokehouse and specialty items are additional. Other custom add-ons, such as seasoned sausage, patties, smoked and cured items, marrow bone splitting, primal blend grind, and dog food grind, are billed separately based on your selections.

  5. Is dry aging included?
    Yes. Up to 21 days of dry aging is included with standard processing. Additional aging available if desired.

  6. How much freezer space do I need?
    Freezer space depends on your cut choices and packaging. Planning estimates:

    • Quarter beef: about 4.5 cubic feet chest or 5.5 cubic feet upright

    • Half beef: about 9–11 cubic feet

    • Whole beef: about 18–22 cubic feet

    • Half pork: about 3–4 cubic feet

    • Whole pork: about 6–8 cubic feet

    • Long-term freezer storage is 25 cents per box per day if needed.

  7. How long does it take?
    Bulk reservations are placed in advance and scheduled around harvest dates. Once your deposit is placed, we confirm timing, collect your cut sheet, complete processing, and send your final invoice before pickup, delivery, or shipping. Lead times vary by season, animal readiness, and processor schedule.

  8. Can I customize my share?
    Yes. All bulk orders include cut sheet selections. Whole and half shares offer the most flexibility. Quarter beef is still customizable, but some cuts cannot be evenly split across multiple buyers, so options are a little more limited.

  9. Can I split a share with another family?
    Yes. Many customers split a share with another household. It is best to decide in advance who will be the main contact for cut sheet coordination, billing, and pickup or delivery details.

  10. Do you offer pickup, delivery, or shipping?
    Yes. Local pickup in Buffalo is available at no charge. Local delivery and adjacent-state bulk delivery are available by arrangement. Frozen shipping is available within the contiguous United States where available.

  11. When is final payment due?
    Final payment is due before pickup, delivery, or shipment.
