A few slices of Heritage pork bacon bring plenty of flavor to this filling skillet. Finish with eggs for a satisfying ranch-style breakfast.

Ingredients

• 6 slices Heritage pork bacon

• 1 lb Yukon Gold potatoes, cut into 1/2-inch cubes

• 1 small yellow onion, diced

• 1 red bell pepper, diced

• 4 eggs

• 1/2 tsp smoked paprika

• Salt and pepper to taste

• Chopped green onion, optional

Instructions

1. Place bacon in a cool large skillet; heat over medium and cook, turning occasionally, until browned and crisp. Transfer to a plate.

2. Pour off excess drippings, reserving about 2 tablespoons in the skillet. Add potatoes and cook over medium heat 12–18 minutes, turning, until tender and golden.

3. Add onion, pepper and paprika. Cook 5–7 minutes until softened; crumble the cooked bacon back into the skillet.

4. Make four small spaces and crack an egg into each. Cover and cook until the whites are fully set and yolks reach your preferred doneness.

5. Season to taste and scatter green onion on top. Serve hot.

Ranch Kitchen Tip

If using thick-cut bacon, cook slowly enough to render the fat without burning the edges.
