Grilled Wagyu Sirloin with Leafy Greens & Roasted Sweet Potatoes

Ingredients

  • (2) 6 oz Wagyu Angus sirloin steaks

  • 2 medium sweet potatoes, cut into wedges

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • 2 cups mixed leafy greens (spinach, kale, arugula)

  • 1 tsp apple-cider vinegar or lemon juice

  • 1 tsp olive oil

  • Optional: fresh herbs (rosemary, thyme)


Directions

  1. Thaw safely: If frozen, thaw steaks in the refrigerator — never on the counter — for 24 hours. (USDA: Safe thawing temperature is ≤ 40°F.)

  2. Preheat oven to 425 °F (220 °C).

  3. Roast potatoes: Toss wedges with olive oil, salt, and pepper. Bake 25 min, flipping once.

  4. Prepare steak: Pat dry and season. Grill over medium-high heat about 3–4 minutes per side.

    • USDA Safe Internal Temperature: 145°F with a 3-minute rest.

  5. Sauté or toss greens with olive oil and vinegar just before serving.

  6. Serve immediately. Refrigerate leftovers within 2 hours; consume within 3–4 days.
