Recipe: Red Wine Braised Beef Short Ribs

Ingredients:

  • 4 lbs Big Horn Mountain Farms Beef Short Ribs

  • Salt & black pepper

  • 3 tbsp olive oil

  • 1 onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 4 cloves garlic, minced

  • 2 tbsp tomato paste

  • 2 cups red wine (or beef broth)

  • 3 cups beef broth

  • 2 sprigs fresh thyme

  • 2 sprigs fresh rosemary

  • 2 bay leaves

Instructions:

  1. Preheat oven to 325°F. Season short ribs generously with salt and pepper.

  2. Heat oil in a Dutch oven over medium-high heat. Sear ribs on all sides until browned; remove and set aside.

  3. Add onion, carrots, and celery to the pot. Cook until softened, then stir in garlic and tomato paste.

  4. Deglaze with red wine, scraping up browned bits. Let simmer 5 minutes.

  5. Return ribs to the pot, add beef broth and herbs, cover, and place in oven.

  6. Braise for 2.5–3 hours until ribs are fork-tender.

  7. Serve hot with mashed potatoes, polenta, or crusty bread.

USDA Safe Cooking Reminder

The USDA recommends cooking whole cuts of beef, like roasts and steaks, to a minimum internal temperature of 145°F, followed by a 3-minute rest time, to ensure food safety. Ground beef should be cooked to 160°F. Please use a meat thermometer to verify doneness and adjust recipes accordingly to meet these guidelines.
