At Big Horn Mountain Farms, we raise a limited number of animals each year on Wyoming pasture with non-GMO feed and local processing. When harvest day comes, we don’t just see ribeyes and roasts — we see broth, braises, dog treats, handmade tallow, and meals that stretch a little further.


That’s the heart of our Nose to Tail Experience: helping you make the most of every animal, with cuts, bones, and fat that often get overlooked, plus the recipes and support to actually use them.


What “Nose to Tail” Means

Nose to tail is a simple idea with a big impact:

  • Respect for the animal – using more than just the “fancy” cuts.

  • Less waste – bones, organs, and fat become broth, stock, and nourishing meals.

  • More value for your family – turning one harvest into dozens of extra meals, soups, and dog treats.


You don’t have to be a chef to cook this way. You just need good ingredients and a little guidance — that’s where we come in.


What You Get with the Nose to Tail Experience

When you choose the Nose to Tail Experience with your whole beef or whole hog, you’ll receive:

  • Access to nose-to-tail products (as available): Bones for broth and stock, organ meats (heart, liver, tongue), extra fat for rendering, shanks, hocks, and other “chef cuts.”

  • A Nose to Tail Starter Guide (PDF + printable): Simple explanations of what each item is best for, storage tips, and a “first 30 days” plan so nothing gets lost in the freezer.

  • Beginner-friendly recipes: Easy, cozy dishes like bone broth, braised shank or hock, and a “hidden organ” ground beef or pork recipe.

  • Ongoing support: A follow-up email and an invitation to reach out with questions as you work through your box.


You pick what you’re comfortable with, and we’ll walk alongside you as you learn.


How It Works

  1. Reserve your whole/half/quarter beef or whole/half hog.

  2. On your cut sheet, check the box to add the Nose to Tail Experience and select the items you’re curious about.

  3. We’ll follow up with availability, pricing, and timing based on your specific animal and our processor.

  4. When your order is ready, you’ll get your meat plus your nose-to-tail items and starter guide so you know exactly what to do with them.
