How Much Beef Do I Get? (Hanging vs Take-Home)
We harvest Wagyu-Angus cattle at approximately 1,000 lb hanging weight. Here’s what that looks like by share, plus a realistic take-home (boxed) weight range using a common 62–70% yield, depending on cut choices (more boneless/lean trim trends toward 62%; more bone-in roasts/stew meat trends toward 70%).
Whole Beef
Hanging weight: ~1,000 lb
Estimated boxed weight: ~620–700 lb (planning midpoint ~660 lb)
Half Beef (Side)
Hanging weight: ~500 lb
Estimated boxed weight: ~310–350 lb (planning midpoint ~330 lb)
Quarter Beef (Mixed Quarter)
Hanging weight: ~250 lb
Estimated boxed weight: ~155–175 lb (planning midpoint ~165 lb)
Notes on yields
Dry-aging reduces water weight and concentrates flavor (a good thing)
More boneless cuts and extra trimming = lower boxed yield, leaner packages
More bone-in roasts, stew cuts, and marrow/bones kept = higher boxed yield
How It Works
- Choose Your Beef – Select your preferred finishing style and harvest month: Grass-Fed, Grass-Finished or Grass-Fed, Grain-Finished
- Reserve With a Deposit – A $1,000 deposit secures your animal, no matter the size you purchase. Smaller shares simply mean you’ll owe less when your final balance* is calculated.
- We’ll Reach Out – After your deposit, we’ll contact you to confirm: Size of your order (whole, half, or quarter), Custom cut instructions and any special requests**, Expected harvest, hanging, and delivery timeline
- Sit back and relax knowing we will continue raising your animal on pasture until the harvest date.
- Processing & Aging – Once we arrive at the harvest date, your animal will be processed and then dry-aged for unbeatable tenderness and flavor.
- After cutting to your preferences, it will be flash-frozen and vacuum-sealed for maximum freshness.
- We will then send your final invoice for the balance* and release to you upon final payment.
Delivery Options – Pick up locally at the ranch, schedule a Buffalo-area delivery for a small delivery fee, or have your beef shipped directly to your door (shipping fees apply).
Make It Your Own – Beyond steaks, roasts, and ground beef, you can request extras such as bones, tallow, or by-products like hides and gloves. Smokehouse** options and other specialty requests are available for an additional fee.
